1.15-1.21 Dinner Ideas - can be #glutenfree

Ever struggle to come up with new dinner ideas? I did for years and years before I started a running list. When I came across a new recipe I liked, I would add it to the list. Here is this week’s dinner plan at Casa de Richter!

Before I created my own planner, I would insert this paper in my planner so I could reference it while I meal planned for the week.

Long story short, here is my meal plan of the week! I will explain how I make all my receipts gluten free here for those interested.

Monday - Chicken & Waffles - a kid favorite! I bread the chicken tenders in a homemade blend of arrowroot starch, paprika and garlic powder. I scramble some eggs in a bowl and dip the chicken tenders in the egg and then in the arrowroot starch and then fry them in olive oil. DELISH! As for the waffles, I buy this waffle mix. We actually prefer it over any other waffle mix. It’s SOOOOO good! You can buy it at Sprouts, Target and probably Whole Foods.

Tuesday - Bunless burgers & fries. We like to top our burgers with cheese, avocado slices, onions, bacon and a fried egg. We buy Alexis fries (they have many different kids) from Sprouts and bake them in the oven.

Wednesday - Kielbasa sausage and campfire potatoes. I’ll half moon 1 lb of kielbasa sausage with a little olive oil and cook them on the stove top.

The campfire potatoes are delish! Take russet potatoes and skin them and cube them. (The bigger the cubes, the longer they take to cook, FYI.) Put down olive oil in a large frying pan (not a ton, just enough to brown them - shouldn’t be standing in olive oil) with some Maldon’s sea salt flakes and rosemary and brown the potatoes.

We pop a bag of micro steam broccoli from Yelloh (formerly Schwab’s) into the microwave to create a super healthy and yummy meal!

Thursday - Fettuccinie Alfredo & breaded chicken. This one is going to blow your mind! Soooo good! I buy the gluten free noodles from Trader Joe’s (great source for gluten free products!) and the chicken from Target. Pair it with a yummy Alfredo sauce (make sure there is no wheat in it!) for a yummy dinner. You can also mix in some broccoli for more fiber.

Friday - we are going out to eat! The cook needs a day off every once and a while :)

Saturday - DIY Pizza. My amazing SIL created her own gluten free pizza dough recipe that is delish! We make the dough and then we break it into 4 dough balls and we each get our own pizza to create. I have toppings for everyone to choose from and everyone is happy creating their own personal pan pizzas.

Sunday - Crockpot ravioli. I used Trader Joe’s gluten free ravioli pasta with this recipe for a super simple dinner that cooks itself.
